This salad is a great addition to many dishes. It's easy, quick, crisp, and refreshing. The key is to use a crisp cucumber varietal like a seedless (aka English) cucumber or Persian cucumbers. If you are looking to save. Currently a seedless cucumber is less than a dollar (only one is needed); whereas, Persian cucumbers are about $4-5 for a bag. The tanginess of a 1:1 volume ratio of lime : olive oil is the perfect balance for me. Plus, the feta neutralizes some of the tanginess and contributes to the saltiness of the salad. Storage: I do recommend eating the salad the same day it's made because the limes soften the cucumbers over time.

Cucumber Feta Salad

Refreshing cucumber feta salad with purple onion and grape tomatoes.

Ingredients

1 seedless Cucumber

½ cup (≈ 8) grape Tomatoes

⅛ purple Onion, sliced

¼ cup Lime Juice (≈ 4 limes)

¼ cup Olive Oil

¼ teaspoon Black Pepper

½ teaspoon Salt

3 oz (≈ ¼ cup) crumbled Feta

Cucumber slices
  1. Slice cucumber diagonally, and then cut the slices in half.
  2. Half grape tomatoes
  3. Add sliced purple onions.
  4. In a cup stir together lime juice, olive oil, black pepper and salt.
  5. Drizzle over cucumber salad and stir.
  6. Top with crumbled feta.
