This recipe sprung from a desire to give something pretty common a creative twist. Yes, cereal bars are so flexible. Yes, you can basically add any kind of cereal to rice crispies to make it YOUR perfect bar. Personally, Cinnamon Toast Crunch has always been my fave and provides the perfect flare to rice cereal. Oh! and Post also makes a fruity pebble cereal WITH MARSHMALLOWS! Unless you're a loyalist to Lucky Charms, this option is definitely a money saver. But the twist in these bars is both the browned butter and the white chocolate topping. You can experiment with milk chocolate, dark chocolate, or even cookies n cream chocolate. The trick is to find the perfect complement between the chocolate and the cereal mix.
I also found that the ratio of cereal to marshmallow is essential. Too much cereal and the bars are dense and hard. Too little cereal and the bars are extra sticky and fall apart. I prefer my bars to hold together but, not tough to bite. In terms of weight, a cereal : marshmallow ratio of 1:1, meaning equal weight, is too dense. But a 1:2 ratio ( i.e. 150gm cereal: 300gm marshies) is a little too loose for my taste. So this recipe falls right in between both ratios at 175 gm cereal with 300gm of marshmallows. Now you have an idea of how to create YOUR perfect consistency.
