What makes this cereal bar so unbelievably satisfying is that it contains all the elements of a cup of cocoa in one bite! Marshmallows, check! Cinnamon, check! Hot cocoa, check! Furthermore, the bitterness from the dark chocolate topping mellows out the sweetness from the bar. Cinnamon Toast Crunch provides the perfect cinnamon factor. I do recommend using your preferred hot chocolate powdered mix to make YOUR perfect hot chocolate cereal bars. I used Nestle Abuelita Authentic Mexican Hot Chocolate Granulated Mix.

Also, take note that the ratio of cereal to marshmallow is essential. Too much cereal and the bars are dense and hard. Too little cereal and the bars are extra sticky and fall apart. I prefer my bars to hold together but, not be too tough to bite. In terms of weight, a cereal : marshmallow ratio of 1:1, meaning equal weight, is too dense. But a 1:2 ratio ( i.e. 150gm cereal: 300gm marshies) is a little too loose for my taste. So this recipe falls right in between both ratios at 175 gm cereal with 300gm of marshmallows. Now you have an idea of how to create YOUR perfect consistency.

Hot Chocolate Rice Krispies Treats

Chewy marshmallow cereal bars with loads of hot chocolate flavor in every bite and a dark chocolate topping that softens the sweetness of the bar.

Ingredients

Cereal

120 grams (≈ 5 cups) rice Cereal

25 grams (≈ ½ cup) cinnamon toast crunch Cereal

20 grams fruity pebbles + marsh Cereal (optional)

4 hand cracked Oreos

300 grams mini Marshmallows

25 grams mini Marshmallows

4 Tablespoons Butter

½ teaspoon Salt

1 teaspoon Vanilla

2 Tablespoons powdered Hot Chocolate Mix

Topping

186 grams Dark Chocolate 60-70%

15 grams (≈ ½ cup) rice Cereal

Technique

  1. Line the baking tray with parchment paper .
  2. Combine all cereals and have all ingredients measured out.
  3. Slightly brown the butter.
  4. Add 2 Tablespoons of hot chocolate mix, vanilla, and salt. Stir to combine.
  5. Add 300 grams of marshmallows. Stir to keep from burning.
  6. Once melted, immediately remove from heat and add cereal.
  7. Mix well quickly and add remaining 25 grams of marshmallows and oreo pieces. (Marshmallows are added at the end to create pockets of marshy goodness.)
  8. Transfer immediately to prepared baking tray. Try to spread evenly, but don't press down hard.
  9. Melt the dark chocolate via microwave (10 second bursts, stirring in between) or double boiler (bowl over boiling water).
  10. Add 15 grams of rice cereal to chocolate.
  11. Spread evenly over the top of the marshmallow cereal mix.
  12. Garnish with extra cinnamon toast crunch and marshmallows.
  13. Allow time to cool, ≈ 30 minutes, but do not refrigerate.
