Browning butter is so very easy. Simply cook butter in a pan on medium-low heat, stirring occasionally, till you see light brown bits at the bottom. This will take about 12 min. Immersing your olfactory organ into the butter transformation will help you sense when the butter is done. Besides, of course, actually seeing the brown bits. By the way, use a pan that allows you to see the browned bits or you may burn the butter. Burned butter is not browned butter. This happens fast so stay alert. You can tell when it's ready because the butter will also have a wonderful nutty fragrance when it's browning.

Butter
1. After about 4 min the butter will have a froth. Butter remains the appearance of liquid gold.
2. At about 7 min the froth will get thinner. Butter too will appear more transparent.
3. At about 9 min the froth will be gone and the butter is starting to look more amber.
4. At about 11min the butter now effuses a glorious caramel, nutty fragrance. Brown bits will now start to appear at the bottom of the pan.
5. Then transfer browned butter with browned bits to a bowl and drop in an ice cube because the butter loses some water while browning.
6. Let it solidify at room temperature. This usually takes some hours. Frankly, it's faster to put the butter in the freezer x 15min and then let it soften at room temperature.
